Baby Jordan
I know not many read this but I would hope those who do would join me in praying for one of my friends from high school. Right now she driving cross country with her husband, 2-year-old son, and her mother-in-law. This is not a family vacation I would wish to be on. They are driving from western Kansas to Philly in hopes that they might be able to give their second son a chance at life.
On June 1, 2011 they received a call informing them the results of the routine sonogram: we were going to have a boy and it appeared that he had a condition known as Congenital Diaphragmatic Hernia (CDH). "We were heartbroken when we realized our son was in great jeopardy. Jordan's diaphragm is allowing the contents of his stomach up into the chest cavity. His heart is being pushed to the right-hand side of his body." This is a serious condition that has a wide spread when it comes to survival rate.
Their blog has been added to my blog list on the side. It is Jordan's Story. there you will find their story, as well as more information about CDH. Please consider joining me in praying for this young family.

Lets Go Fly a Kite!
We took Naomi out to fly her new kite. She had gotten a kite for Easter but it broke (the Bunny had bought a pretty cheap kite to start with.) She had a lot of fun.
She ran up and down the field down the street from us.
She did pretty good keeping the kite in the air.
She did not get tangled up either!
But it was hot! So we did not stay out for long.
Once it gets cooler on a consistant basis we will have to take her out to fly her kite!

Recipe: Cucumber Salsa
It is garden time. The time when peoples gardens start producing (hopefully) an abundance of veggies and such. So much that they start trying to give away produce tho those who do not have a garden. Well, some of Adam's Coworkers gave us a bunch of cucumbers. Besides adding them to or making a salad from them, or pickling them I had no idea what to do with cucumbers. So we started a search. We did find that grilling them after letting them sit in olive oil and spices was not too bad.
Then we came across this recipe for Cucumber Salsa. Now, I was a bit nervous when it comes to homemade salsa. I had a bad experience with some when I was expecting Naomi. But I decided to get over it and try it! It was really good. We took it to our church potluck and it went over pretty well.
So here is my recipe for Cucumber Salsa
2 large cucumbers (large chunks)
1/4cup Apple Cider Vinegar
1 pkg Fiesta Ranch dry mix(Hidden Valley)
1 can of Rotel (you chose your spiciness level)
2 large tomatoes (I used 3 medium)
Throw it all in your blender and puree until mixed and chunkiness level you like.
When you first make it it is pretty spicy. But once you let it sit in the fridge over night the spiciness does mellow.
